Not only is this minestrone soup the perfect meal for a chilly day, it's also an easy way to get your daily serving of veggies. You'll be hard to pressed to find a recipe that combines more delicious vegetables together than this one.

Cooler temperatures instantly make me want to make soup for every meal. An added bonus with this recipe is that it's easy to freeze. However, if you decide to go this route be sure to forgo adding the noodles. They don't freeze...
